Air-fried Pear and Cinnamon Porridge

This was a surprisingly easy way to prepare cooked pear and such an elegant way to top porridge. Cinnamon is also has antioxidant and anti-inflammatory properties that make it beneficial for overall health.

Ingredients
  

  • 2/3 cup rolled oats
  • 2/3 cup grated zucchini
  • 1.5 cups milk or nut milk
  • 30 grams vanilla protein powder or a sprinkle of coconut flour and a few teaspoons of raw honey.
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons coconut oil melted
  • 1 pear cut in half and core removed

Instructions
 

  • In a small bowl combine the coconut oil, 1/2 teaspoon cinnamon and nutmeg then brush this mixture onto the pear halves. Place them in the air fryer for 10-15 minutes, regularly checking them.

  • Add the oats, zucchini and milk to a saucepan. Bring to a boil then let it simmer for about 15 minutes
    2/3 cup rolled oats, 2/3 cup grated zucchini, 1.5 cups milk
  • Removed the saucepan from heat and add the protein and 1/2 teaspoon of cinnamon.
    30 grams vanilla protein powder, 1 teaspoon ground cinnamon
  • Place the oatmeal into a bowl and top with vanilla yoghurt (I used Yo-pro), pear, toasted coconut flakes and a drizzle of maple syrup.
