Preheat the oven to 180 degrees celsius FF and place chicken thighs along with the garlic and a little bit of olive oil in a baking tray. Cook in oven for 35-40 minutes. Alternatively, cook the chicken in a fry pan.
2 large chicken thighs, 1 clove garlic
Cook the pasta as per the packet instructions. Once cooked, cool in the fridge.
1 cup whole wheat pasta spirals
In 2 serving bowls, halve the rest of the ingredients and mix to combine.
1 cup cucumber, 1 cup tomato, 1/4 cup purple onion, 1/4 cup feta, 2 tabelpsoons extra virgin cold pressed olive oil, salt and pepper to taste
Once the chicken and pasta have cooked (and cooled if you prefer) then stir your desired amount into the salads and enjoy.
