In large mixing bowl combine all of the ingredients with your hands and then form them into rissoles.
500 grams kangaroo mice, 1 egg, 1 small zucchini, 1 small carrot, 1/3 cup purple onion
Heat a fry pan over a medium heat, add olive oil and cook each rissole, flipping them, until it is cooked through. Serve with veggies or salad. I topped mine with a greek yoghurt sauce that I made mixing 1/3 cup greek yoghurt and 1 tablespoon garlic aoli.
