Pre-heat oven to 160 degrees celsius fan-forced and line a bread tin with baking paper.
In a medium mixing bowl combine the mashed banana, eggs, zest, coconut oil and sugar.
2 large ripe bananas, 2 eggs, 1/4 cup coconut oil, 1/4 cup coconut sugar, 1 lime
Then add the flours and baking powder and stir until completely combined.
1/4 cup coconut flour, 3/4 cup oat flour, 2 teaspoons baking powder
Transfer mixture to the bread tin and bake in the oven for 35-40 minutes. After it is finished, take it out of the oven and leave it to rest in the bread tin for 10 minutes and then transfer to a wire rack to cool completely.
