Heat a large pot over a medium/high heat and add oil, garlic, ginger, onion, lime leaf and lemon grass. Stir frequently until fragrant.
2 tablespoons olive oil, 2 cloves garlic, 1 stalk spring onion, 1 tablespoon ginger, 1 lime leaf, 1 stalk lemongrass
Then add chicken breast and cook until the outsides have browned, then add the remaining ingredients and let it simmer for 20-30 minutes.
2 small chicken breasts, 1 zucchini, 1 bunch broccolini, 2 bok choy's, 2 tablespoons Tamari soy sauce, 400ml canned coconut milk, 1/4 teaspoon cayenne pepper
Serve on quinoa or brown rice
