Ingredients
  

  • 2 chia eggs 1 chia egg = 1 tablespoon of chia seeds + 2 tablespoons water
  • 1 medium ripe banana mashed
  • 1/2 cup walnut, coconut and/or macadamia oil extra virgin, cold pressed
  • 1/2 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1 lemon zested
  • 1 teaspoon lemon juice
  • 1/2 teaspoon baking powder
  • 1 cup oat flour
  • 1 cup frozen blueberries

Instructions
 

  • Make your chia eggs then set aside for 10-15 minutes.

  • Pre-heat oven to 160 degrees celsius fan-forced and line a baking tray with baking paper.
  • Combine the chia egg, banana, oil, sugar, zest, juice and vanilla in a medium sized mixing bowl.

  • Stir in the oat flour and baking powder until well combined and then add the blueberries.

  • Transfer to baking tray and bake in oven for 35-40 minutes or until it starts to go golden in colour. When finished, remove from oven and leave to sit in the tray for 10-15 minutes before gently transferring it to a wire rack. Wait until it has completely cooled to eat, best served straight out of the fridge.
