Vegan Blueberry Blondies
These blondies make a great morning or afternoon tea snack

Ingredients
- 2 chia eggs 1 chia egg = 1 tablespoon of chia seeds + 2 tablespoons water
- 1 medium ripe banana mashed
- 1/2 cup walnut, coconut and/or macadamia oil extra virgin, cold pressed
- 1/2 cup coconut sugar
- 1 teaspoon vanilla extract
- 1 lemon zested
- 1 teaspoon lemon juice
- 1/2 teaspoon baking powder
- 1 cup oat flour
- 1 cup frozen blueberries
Instructions
- Make your chia eggs then set aside for 10-15 minutes.2 chia eggs
- Pre-heat oven to 160 degrees celsius fan-forced and line a baking tray with baking paper.
- Combine the chia egg, banana, oil, sugar, zest, juice and vanilla in a medium sized mixing bowl.1 medium ripe banana, 1/2 cup walnut, coconut and/or macadamia oil, 1/2 cup coconut sugar, 1 teaspoon vanilla extract, 1 lemon, 1 teaspoon lemon juice, 2 chia eggs
- Stir in the oat flour and baking powder until well combined and then add the blueberries.1/2 teaspoon baking powder, 1 cup oat flour, 1 cup frozen blueberries
- Transfer to baking tray and bake in oven for 35-40 minutes or until it starts to go golden in colour. When finished, remove from oven and leave to sit in the tray for 10-15 minutes before gently transferring it to a wire rack. Wait until it has completely cooled to eat, best served straight out of the fridge.
