Halloumi and Chorizo Shakshuka
Shakshuka is a fun and flavourful way to mix up your typical eggs for breakfast. There are so many variations and possibilities with shakshuka, but please enjoy this one I have created with delicious ingredients like halloumi and chorizo served with sourdough, salsa and spicy micro-greens.

Ingredients
- 1 tablepspoon extra virgin olive oil cold pressed
- 1 clove garlic diced
- 1/2 small purple onion diced
- 2 large tomatoes diced
- 2 button mushrooms thinly sliced
- 1 handful spinach
- 1 organic chorizo sausage sliced to desired thickness
- 4 eggs
Instructions
- Heat a large fry pan over a medium high heat with olive oil, then add the garlic and onion and fry until fragrant.1 tablepspoon extra virgin olive oil, 1 clove garlic, 1/2 small purple onion
- Then add the tomatoes, mushrooms and chorizo. Cook, stirring frequently, until the mushrooms and tomato soften.2 large tomatoes, 2 button mushrooms, 1 organic chorizo sausage
- Then add the spinach and mildly wilt it before evenly spreading mixture in the pan and cracking the eggs over the top of the mixture covering it. turn the heat down to a medium heat so the bottom of your mixture won't burn, and use a lid to cook the eggs to your desired runny-ness.1 handful spinach, 4 eggs
- Serve with ghee buttered sourdough, spicy micro-greens and salsa.
