Ingredients
  

  • 1 egg
  • 1/3 cup milk or nut milk
  • 1 teaspoon vanilla extract
  • 1/4 cup vanilla protein powder or more oat flour
  • 1/2 cup oat flour
  • 1 teaspoon coconut flour
  • 1/2 teaspoon cinnamon
  • 4 circular slices of pineapple

Instructions
 

  • In a medium mixing bowl combine the egg, milk and vanilla
    1 egg, 1/3 cup milk, 1 teaspoon vanilla extract
  • Then add the protein powder, oat flour, coconut flour and cinnamon
    1/4 cup vanilla protein powder, 1/2 cup oat flour, 1 teaspoon coconut flour, 1/2 teaspoon cinnamon
  • Heat a fry pan over a medium heat, add some oil to the pan and once hot, add 2 tablespoons of pancake batter to the pan, place a slice of pineapple in the centre and gently push it down then coat the pineapple with more battle to cover it. Cook for a couple of minutes on each side or until browned.
    4 circular slices of pineapple
  • Serve with coconut yoghurt or cream, cashew butter, maple syrup and blueberries.
