Pina Colada Protein Pancakes

Ingredients
- 1 egg
- 1/3 cup milk or nut milk
- 1 teaspoon vanilla extract
- 1/4 cup vanilla protein powder or more oat flour
- 1/2 cup oat flour
- 1 teaspoon coconut flour
- 1/2 teaspoon cinnamon
- 4 circular slices of pineapple
Instructions
- In a medium mixing bowl combine the egg, milk and vanilla1 egg, 1/3 cup milk, 1 teaspoon vanilla extract
- Then add the protein powder, oat flour, coconut flour and cinnamon1/4 cup vanilla protein powder, 1/2 cup oat flour, 1 teaspoon coconut flour, 1/2 teaspoon cinnamon
- Heat a fry pan over a medium heat, add some oil to the pan and once hot, add 2 tablespoons of pancake batter to the pan, place a slice of pineapple in the centre and gently push it down then coat the pineapple with more battle to cover it. Cook for a couple of minutes on each side or until browned.4 circular slices of pineapple
- Serve with coconut yoghurt or cream, cashew butter, maple syrup and blueberries.
