Beetroot Hummus
(GF, NF, SF, V)Enjoy a home-made, preservative free hummus with a pink twist

Ingredients
- 1 small beetroot roasted
- 2 cloves of garlic roasted
- 1/2 of a small red onion
- 1 can of organic chickpeas drained, rinsed and shells removed
- 1/4 cup of olive oil
- 1/4 cup of tahini
- juice of 1 lemon and a little zest if you like
- 1/2 teaspoon of sea salt
Instructions
- Using a food processor, blend all of the ingredients together until smooth.1 small beetroot, 2 cloves of garlic roasted, 1/2 of a small red onion, 1 can of organic chickpeas, 1/4 cup of olive oil, 1/4 cup of tahini, juice of 1 lemon, 1/2 teaspoon of sea salt
- Serve on your avocado and toast or with veggie sticks/corn chips.
