Healthy jam drops

These Jam drops are delicious and satiating made with a combination of almond meal and coconut flour. They are a perfect healthy alternative to satisfy a sweet craving.
Course Snack

Ingredients
  

  • 1 cup almond meal
  • 1/2 cup coconut flour
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 2 tablespoons coconut oil
  • 3 tablespoons raw honey or maple syrup
  • 2 tablespoons Jam I used homemade thyme and apricot jam for this one but any jam will do. You can check out my chia jam recipe under 'dips, sauces and spreads' for a healthier alternative.

Instructions
 

  • Pre-heat the oven to 160 degrees celcuis fan-forced and line a baking tray wth baking paper.
  • In a bowl first combine the dry ingredients with a wooden spoon.
    1 cup almond meal, 1/2 cup coconut flour, 1/4 teaspoon sea salt, 1/4 teaspoon baking soda
  • Then add in the wet ingredients and stir well to form a dough.
    2 tablespoons coconut oil, 3 tablespoons raw honey
  • Wet your hands and take a spoonful of the mixture into your hands, roll it into a ball, place on the baking tray then stick your thumb into it to make a hole. Repeat this process until the mixture is used up.
    2 tablespoons Jam
  • Spoon some jam into each hole and then bake for 10-12 minutes.
  • Allow them to cool completely before eating.

Notes

Save the elbow grease and try this recipe in the food processor by adding in the dry ingredients first and then slowly adding in the wet ingredients.
