Raw Pesto Salad
Make this salad into a meal by adding chicken or fish and pasta

Ingredients
- 1.5 cups fresh basil
- 1 large clove garlic roughly chopped
- 1/2 cup greek yoghurt
- 2 cups pumpkin roasted
- 2 tablespoons pumpkin seeds toasted
- 1/2 head broccoli roughly chopped
- 1 tablespoon purple onion
- 4 cups spinach
- 2 tablespoons broccoli sprouts
Instructions
- Using a blender, make the dressing by combining the basil, garlic, olive oil and yoghurt1.5 cups fresh basil, 1 large clove garlic, 1/2 cup greek yoghurt
- In a salad bowl combine the rest of the ingredients and top with the dressing.2 cups pumpkin, 2 tablespoons pumpkin seeds, 1/2 head broccoli, 1 tablespoon purple onion, 4 cups spinach, 2 tablespoons broccoli sprouts
