Satay Stir Fry
This satay stir fry has a kick of spice from adding a little red curry paste

Ingredients
- 1 tablespoon sesame oil or other oil of choice
- 1 clove garlic finely chopped
- 1/2 tablespoon ginger finely chopped
- 1 large chicken breast roughly chopped
- 1 small zucchini roughly chopped
- 1 small capsicum roughly chopped
- 1 cup green beans
- 1 tablespoon red curry paste
- 2 tablespoons peanut butter
- 2 tablespoons tamari soy sauce
- 1/3 cup canned coconut milk
Instructions
- Combine the soy, red curry paste and peanut butter and set aside.1 tablespoon red curry paste, 2 tablespoons peanut butter, 2 tablespoons tamari soy sauce
- Heat a large pan over a medium high heat and add the oil, garlic and ginger. Fry until they are fragrant and then add the chicken breast to brown it.1 tablespoon sesame oil, 1 clove garlic, 1/2 tablespoon ginger, 1 large chicken breast
- Once chicken is browned, add vegetables and the soy, peanut and red curry mixture. Stir fry for 5 minutes.1 small zucchini, 1 small capsicum, 1 cup green beans
- Remove from the heat and add the coconut milk. Serve with brown rice or konjac noodles.1/3 cup canned coconut milk
