Equipment

  • 1 slow cooker
  • 1 cheesecloth
  • 1 large colander
  • 1 food thermometer

Ingredients

  • 3 litres non-homogenised full cream milk
  • 3/4 cup Chobani greek yoghurt or other good quality greek yoghurt – just not 'greek style' yogurt. This is important to get the right cultures.

Instructions

  • Put slow cooker on high setting and pour in milk. Check the heat occasionally heating the milk to 80 degrees celcius. This should take around 2-3 hours.
3 litres non-homogenised full cream milk
  • Turn the slow cooker off and let milk cool to 0-10 degrees celcius. This should take another 2-3 hours. In the meantime, take your greek yoghurt out of the fridge and let it warm to room temperature.
    3/4 cup Chobani greek yoghurt
  • Once the milk is between 0-10 degrees celcius, whisk in the greek yoghurt, wrap the slow cooker in a towel and let it sit for 10-12 hours (best done overnight).
  • Place your colander over a large bowl (or kitchen sink if you do not want to reserve the whey liquid) and cover it with cheesecloth. Transfer the yoghurt into the cheesecloth and allow it to drain for 2-4 hours (depending on how thick you enjoy your yoghurt).
  • Once complete, store it in an air tight container or jar and keep in the fridge for 2-3 weeks. Reserve 3/4 of a cup for your next batch.

Notes

This recipe is best started in the early afternoon (1-3pm) so that you can allow it to sit overnight.
Quite a bit of whey liquid is reserved from this recipe which can be great in savoury baking or cooking, for hair and skin use or as a fungicide in your garden. It can also be used to add extra protein to your everyday diet.
