Chia Coconut French Toast

Ingredients
- 1 chia egg (1 tablespoon of chia seeds: 2.5 tablespoons of hot water – let it rest for 5 minutes)
- 1 ripe banana mashed
- 400 ml can of coconut milk
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
- 1/4 teaspoon of sea salt
- 4 slices of sourdough bread
- 2 tablespoons olive oil for frying
Toppings:
- berries, maple syrup and cocao nibs.

Method
- Make your chia egg and set aside for 5 minutes1 chia egg
- Meanwhile, combine the banana, coconut milk, vanilla, cinnamon and sea salt, and add chia egg when it is ready.1 ripe banana, 400 ml can of coconut milk, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, 1/4 teaspoon of sea salt
- Heat a frying pan on a medium/high heat and slice 4 pieces of bread.4 slices of sourdough bread
- Add oil to pan (use approximately 1/2 tablespoon of oil per slice of bread, less works too), cover a slice of bread in mixture and add to pan, cooking until one side is golden (a few minutes) and then flipping. Repeat for the other slices of bread.2 tablespoons olive oil for frying
- Add toppings!
