Ingredients
  

  • 1 chia egg (1 tablespoon of chia seeds: 2.5 tablespoons of hot water – let it rest for 5 minutes)
  • 1 ripe banana mashed
  • 400 ml can of coconut milk
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of sea salt
  • 4 slices of sourdough bread
  • 2 tablespoons olive oil for frying

Toppings:

  • berries, maple syrup and cocao nibs.

Method

  • Make your chia egg and set aside for 5 minutes
    1 chia egg
  • Meanwhile, combine the banana, coconut milk, vanilla, cinnamon and sea salt, and add chia egg when it is ready.
    1 ripe banana, 400 ml can of coconut milk, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, 1/4 teaspoon of sea salt
  • Heat a frying pan on a medium/high heat and slice 4 pieces of bread.
    4 slices of sourdough bread
  • Add oil to pan (use approximately 1/2 tablespoon of oil per slice of bread, less works too), cover a slice of bread in mixture and add to pan, cooking until one side is golden (a few minutes) and then flipping. Repeat for the other slices of bread.
    2 tablespoons olive oil for frying
  • Add toppings!
