This is what I love to do when my sourdough starts getting old!

Ingredients
  

  • 2-3 slices of sourdough
  • 1 egg
  • 1/2 cup almond milk or cows milk
  • 2 tablespoons vanilla protein powder
  • 1 tablespoon wholegrain wheat flour or brown rice flour
  • 1/2 tablespoon olive oil extra virgin, cold pressed

Instructions
 

  • In a small, wide bowl, combine the egg and milk before adding the dry ingredients.
    1 egg, 1/2 cup almond milk, 2 tablespoons vanilla protein powder, 1 tablespoon wholegrain wheat flour
  • Make sure mixture is smooth and a little runny, similar to a pancake mixture (you may need to add a little more milk to get it to the right consistency).
  • Heat a pan over a medium heat with oil. Coat sourdough in the mixture and then place in the pan. cook for a few minutes on each side or until golden.
    2-3 slices of sourdough, 1/2 tablespoon olive oil
  • Serve with cashew butter, berries and a little maple syrup
