Berry Chia Jam

Ingredients
- 3 cups of berries of choice or a mix
- 2 teaspoons of lemon juice
- 2 tablespoons of coconut sugar or granulated sweetener
- 2 tablespoons of chia seeds
Instructions
- Heat a saucepan over a medium-high heat and add the berries and lemon juice.2 teaspoons of lemon juice, 3 cups of berries of choice or a mix
- Cook, stirring occasionally, until the berries have softened then add the coconut sugar and keep cooking over a medium heat.2 tablespoons of coconut sugar
- Once the berries are quite mushy, remove the saucepan from the heat and use a fork, potato masher or stick blender (depending on how chunky you like your jam) to mash the berries.
- Stir through the chia seeds and allow to cool completely before storing it in a jar in your fridge for up to 2 weeks.2 tablespoons of chia seeds
