Ingredients
  

  • 1.5 cups of quinoa flour + extra for kneading and rolling
  • 3/4 cup of plain coconut yoghurt or greek yoghurt

Toppings on this pizza

  • hummus
  • purple onion
  • capsicum
  • rocket
  • vegan mayonnaise

Instructions
 

  • Pre-heat oven to 180 degrees celsius FF.
  • Combine 1 cup of flour with the coconut yoghurt, then add the remaining flour.
    1.5 cups of quinoa flour, 3/4 cup of plain coconut yoghurt
  • Spread some extra flour over a flat surface lined with baking paper.
  • Place dough on top and knead the mixture for 1-2 minutes.
  • Form dough into a round ball then use a rolling pin and extra flour where needed to make a large circular base approximately 1cm thick.
  • Lift each end of the baking paper and carefully transfer to a baking tray, place in the oven for 10 minutes, add toppings and cook for another 15 minutes.
