Love greek salad? Love pasta? Why not both? This recipe uses a whole wheat spiral pasta meaning it has more fibre and protein and is much more filling.

Ingredients
  

  • 2 large chicken thighs roughly chopped
  • 1 clove garlic diced
  • 1 cup whole wheat pasta spirals
  • 1 cup cucumber diced
  • 1 cup tomato diced
  • 1/4 cup purple onion diced
  • 1/4 cup feta crumbled
  • 2 tabelpsoons extra virgin cold pressed olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 180 degrees celsius FF and place chicken thighs along with the garlic and a little bit of olive oil in a baking tray. Cook in oven for 35-40 minutes. Alternatively, cook the chicken in a fry pan.

  • Cook the pasta as per the packet instructions. Once cooked, cool in the fridge.

  • In 2 serving bowls, halve the rest of the ingredients and mix to combine.
    1 cup cucumber, 1 cup tomato, 1/4 cup purple onion, 1/4 cup feta, 2 tabelpsoons extra virgin cold pressed olive oil, salt and pepper to taste
  • Once the chicken and pasta have cooked (and cooled if you prefer) then stir your desired amount into the salads and enjoy.
