Kangaroo is a lean red meat and is a great source of iron! This recipe is perfect for a BBQ.

Ingredients
  

  • 500 grams kangaroo mice
  • 1 egg
  • 1 small zucchini grated
  • 1 small carrot grated
  • 1/3 cup purple onion diced
  • 1 tablespoon olive oil

Instructions
 

  • In large mixing bowl combine all of the ingredients with your hands and then form them into rissoles.
    500 grams kangaroo mice, 1 egg, 1 small zucchini, 1 small carrot, 1/3 cup purple onion
  • Heat a fry pan over a medium heat, add olive oil and cook each rissole, flipping them, until it is cooked through.
    Serve with veggies or salad. I topped mine with a greek yoghurt sauce that I made mixing 1/3 cup greek yoghurt and 1 tablespoon garlic aoli.
