Ingredients
  

  • 2 tablespoons olive oil extra virgin, cold pressed
  • 2 cloves garlic finely chopped
  • 1 stalk spring onion roughly chopped
  • 1 stalk lemongrass
  • 1 tablespoon ginger finely chopped
  • 1 lime leaf crushed in hands
  • 2 small chicken breasts roughly chopped
  • 1 zucchini roughly chopped
  • 1 bunch broccolini roughly chopped
  • 2 bok choy's roughly chopped
  • 2 tablespoons Tamari soy sauce
  • 400ml canned coconut milk
  • 1/4 teaspoon cayenne pepper

Instructions
 

  • Heat a large pot over a medium/high heat and add oil, garlic, ginger, onion, lime leaf and lemon grass. Stir frequently until fragrant.

  • Then add chicken breast and cook until the outsides have browned, then add the remaining ingredients and let it simmer for 20-30 minutes.
    2 small chicken breasts, 1 zucchini, 1 bunch broccolini, 2 bok choy's, 2 tablespoons Tamari soy sauce, 400ml canned coconut milk, 1/4 teaspoon cayenne pepper
  • Serve on quinoa or brown rice
